Halibut Dip

Ingredients:
 
16 oz smoked halibut
 
½ cup mayonnaise
 
½ cup sour cream
 
2 tsp honey Dijon
 
1 tsp Worcestershire sauce
 
1 tsp lemon juice
 
2 cloves garlic, minced
 
Dash of Tabasco
 
 Directions:
 Mix all ingredients in a bowl and mash with fork. Cover and refrigerate 1hour. Serve at room temp. on toast points, or crackers, mixed into salad or as a sandwich filling.

Smoked Halibut Chowder

Ingredients:
 16 oz Smoked Halibut, flaked

 2 T butter or olive oil
 ½ cup chopped onions
 2 potatoes, cooked and diced
 2 T flour
 2 cups chicken or veggie bouillon
 1/2 cup sour cream
 1 T fresh dill
 ½ tsp pepper

 
 Directions:
 
In a saucepan, melt butter or add olive oil. Sauté onion, potatoes, and pepper. Stir in flour, add bouillon, and cook over medium heat stirring constantly until boiling. Add sour cream, dill, and smoked halibut. Let simmer 5 minutes stirring frequently. Serve with Sourdough bread.

Smoked Halibut & Corn Chowder

Ingredients:
 5 Slices Precooked Bacon, crumbled

 1 Onion, diced
 3 Carrots, sliced
 3 Celery Stalks, sliced
 2 Bay Leaves
 2 tsp thyme
 4 cups chicken or veggie bouillon
 3 potatoes, diced, skin on ok
 4 cups fresh corn
 2 cups milk
 12 oz smoked halibut
 Salt and pepper

 
 Directions:
 
Sauté onions, carrots, and celery in olive oil or butter for 5 minutes. Stir in bay leaves and thyme. In a pot, bring stock to a boil. Stir in sautéed veggies and simmer. Remove bay leaves, puree mixture if desired and return to pot. Add potatoes, corn, crumbled bacon and black pepper. Simmer for about 10 minutes stirring frequently. When potatoes are done, add milk and halibut and simmer a few more minutes. Serve with crusty bread.

Halibut Salad

Ingredients:
 16 oz Smoked Halibut or Salmon

 ½ cup Red Onion, diced
 1 Tomato, chopped
 1 Cucumber, chopped
 3 cups Lettuce, chopped
 ½ cup Vinaigrette (Extra Virgin Olive Oil, 2 Mashed Garlic Cloves, Rice Wine Vinegar) Salt and Pepper
 1 T Dijon mustard
 1 T Mayonnaise
 1tsp Basil
 

 Directions:
 
Flake halibut into a large bowl. Add the onion, tomatoes, cucumber and lettuce. Mix in the vinaigrette, mustard, mayonnaise, basil, salt and pepper. Toss and enjoy with crusty bread.
